Liege Waffles

Liege (lee-edge) waffles are sweeter and chewier than the more common Belgian waffles and are made from a brioche bread type dough rather than batter. The other key characteristic is that imported Pearl Sugar pieces are added to it, which caramelizes when cooked and creates a crunchy, buttery outside. This type of waffle is commonly sold by street carts plain or sprinkled with sugar.
